Ingredients

- 500 ml (2 cups) water
- 2 Tbsp dried butterfly pea flowers
- 1 tsp honey
- 1 tsp fresh ginger, sliced (optional)
- Juice of 1 lemon
- 1 Tbsp apple cider vinegar (with mother)
Instructions
- Boil the water. Add 500 mL of water to a saucepan and bring to a boil. If using ginger, add it now to infuse.
- Steep the flowers. Remove from heat, add butterfly pea flowers, and steep for ~10 minutes until the mixture turns a deep blue.
- Strain. Strain out the flowers for a clear drink (or leave them in for a rustic look).
- Add flavorings. Stir in honey, lemon juice, and apple cider vinegar. Watch it shift from vivid blue to purple.
- Serve hot or iced. Enjoy warm immediately, or cool slightly and pour over ice.
Notes
- Adjust sweetness: about 1 tsp honey per cup for sweeter, 1/2 tsp per cup for lighter sweetness.
