Instructions

  1. Prepare the Carrots: Wash your carrots thoroughly. Peel if desired. Slice into thin rounds or “chip” shapes (about 1/8 inch thick). A mandoline slicer gives the most even results for better texture and flavor absorption.
  2. Combine Ingredients: Place the sliced carrots in a medium bowl.
  3. Add Seasoning: Drizzle the white vinegar over the carrots. Start with 1 tablespoon and increase if you like a stronger tang.
  4. Season with Salt: Sprinkle 1/4 teaspoon salt evenly over the carrots. Adjust to taste.
  5. Add Oil (Optional): For richer flavor and to help seasonings adhere, add 1 teaspoon olive oil.
  6. Toss Thoroughly: Mix everything well so each slice is evenly coated. Use clean hands or a spoon.
