This smooth and creamy tropical mocktail combines frozen pineapple, coconut cream, and pineapple juice for a refreshing non-alcoholic treat. It’s so good you won’t miss the rum!

  • 1 cup (140g) frozen pineapple chunks
  • ⅓ cup (80ml) coconut cream
  • ½ cup (120ml) pineapple juice


Instructions

  1. Prepare your blender:
    Use a high-speed blender for a smooth, creamy texture. A powerful blender like a Vitamix is ideal.

  2. Add ingredients:
    Place the frozen pineapple chunks, coconut cream, and pineapple juice into the blender.

  3. Blend until smooth:
    Blend for 30–45 seconds until the mixture is completely smooth and creamy.

  4. Pour and garnish:
    Pour the mocktail into your favorite glass. A snifter glass adds a nice tropical touch!

  5. Serve immediately:
    Enjoy your drink right away while it’s cold and creamy.

Notes

  1. For the creamiest result, make sure your pineapple is fully frozen.
  2. Coconut cream, not coconut milk, gives the best richness and texture.
  3. If your blender isn’t high-powered, blend in short bursts and scrape down the sides if needed.
  4. You can garnish with extra mint, a pineapple slice, or even a paper umbrella for fun!
